All Needed Ingredients:
You will need
following primary and key ingredients to cook this awesome chicken karahi easily at
home. You must keep spices and ingredients in same ratio/quantity as will be
mentioned in this 100% authentic and unique recipe. You have to arrange for;
i-Chicken with
bones 1 Kg
ii-Thick Yogurt
150 gm
iii-Lemon juice
3 TBS
iv-Green chili
chopped 4-5
v-Fresh Green
Coriander 2 TBS
vi-Tetra Pack Milk Cream 2 TBS
vii-Turmeric powder 1/2 Tspviii-Red chili
powder 1 TBS
ix-Cumin Seed
powder 1 TBS
x-White pepper
powder 1/2 Tsp
xi-Qasoori Methi
1 Tsp
xii-Cooking Oil 1/2
cup
xiii-Onion
chopped 2 small size
xiv-Ginger 1

xv-Garlic 4-5

xvi-Cashew nuts

xvii-Bay leaf
(1), cloves (4), green cardamom (2), Star Anise (Badyan ka phool) 1

Directions to Cook This Recipe:Cooking process
of this chicken recipe has been divided into 2 steps; Marinating and preparation of
gravy.
1st Step; Marinate the Chicken:
1) Take chicken
pieces in a bowl and add yogurt, milk cream, lemon juice, chopped green chili,
fresh green coriander, turmeric powder, red chili, cumin seed powder & white
pepper powder
2) Now, add all
spices and ingredients properly, add qasoori methi and mix very well to get a
uniform look
3) Burn a coal,
put it in a smaller bowl and place on marinated mixture and add a few drops of
oil on coal to get a smoky flavor
4) Place a lid
over this and aside for 30-60 minutes
2nd Step; Preparation of Gravy & Cooking:
1-Put a medium
sized cooking pan on medium flame and add 3 TBS of cooking oil and let it fully
warm
2-Add 2 small
sized chopped onion and fry it to make it ONLY soften
3-Put soften &
fried onion in a blender jug, add ginger piece, garlic and cashew nuts to grind
well
4-Add 1/2 cup of
oil (8-10 TBS) in a pan and warm it on medium flame
5-Add cloves, bay leaf, green cardamom and star anise to fry for 2 minutes
6-Put gravy (grinded material) in the pan and fry it for 4 minutes continuously
7-Now, add
marinated chicken in the pan and start frying it for 4-5 minutes with gentle
hands
8-Add 1 cup of
fresh water in this and start cooking it again on medium flame
9-Reduce flame
medium to low and cover with a lid for next 12-15 minutes
10-Remove lid of
pan, add salt (up to taste) and black pepper powder and stir well & simmer
for 2 minutes
11-Your Chicken Reshmi Karahi is ready to serve with an elegant look and mouthwatering taste.
