Chicken Tikka Karahi-Complete Recipe with a Specific Taste and Flavor

1-For Marinating Process:

i) Chicken with Bones 1 Kg

ii) Ginger-Garlic paste 2 TBS

iii) Lemon Juice 3-4 TBS

iv) Red Chili powder 2 Tsp (Less spicy)

v) Salt 1 Tsp

vi) Turmeric powder 1/4 Tsp

vii) Coriander powder 1 Tsp

viii) Mixed spices 1 Tsp

ix) Cumin seed powder 1 Tsp

x) Red chili flakes 1 Tsp

xi) Orange food color 1/8 Tsp

xii) Cooking oil/Ghee 2 cup for frying

2-Gravy Ingredients:

i) Chopped onion 2 medium sized

ii) Cooking oil 1 Cup

iii) Chopped Ginger 1 TBS

iv) Chat Masala 1 Tsp

v) Red chili powder 2 Tsp

vi) Black pepper 2 Tsp

vii) Cumin powder 2 Tsp

viii) Coriander powder 2 Tsp

ix) Salt 1 Tsp (up to taste)

x) Thick Yogurt 1/2 cup

xi) Tomato paste 1 cup

xii) Green chili 4-5

xiii) Fresh green coriander 2 TBS

xiv) Julian cutting ginger 1 TBS

xv) Qasoori methi 1 TBS

1-Take a big bowl and add washed and dried chicken pieces to marinate it with spices

2-Add lemon juice, ginger-garlic paste, red chili powder, red chili flakes, salt, coriander powder, cumin seed powder, turmeric powder, mixed spices (garm masala) and orange food color

3-Mix this mixture quite well and for 5 minutes to get a uniform look of material

4-Aside this marinated material for 2 or more hours (30 Minutes minimum)

5-Take a big pan, add cooking oil of 2 cups and turn on flame to warm it

6-Place all chicken pieces in very hot oil and fry it for 5 minutes and then change position of chicken pieces and fry it again for 5 minutes from other side

7-Let it fry deeply up to 70-80% and then dish out

8-Put a pan on flame and add 1 cup of cooking oil to warm it

9-Add chopped onion to soften it for 4-5 minutes and add ginger-garlic paste to fry again

10-Start adding spices like chat masala, red chili powder, crushed black pepper, coriander and cumin seed powder and stir well after mixing

11-Fry this mixture for 3-4 minutes and add thick yogurt and dry water of yogurt by frying for 3 minutes

12-Now, add tomato curry/paste and green chili for cooking

13-Add Julian cutting ginger and fresh green coriander and cook it for 1 minute

14-Start adding fried chicken pieces in this gravy and mix well and simmer/cook with lid for 8-10 minutes

15-Remove the lid and add crushed Qasoori methi and dish out this recipe for garnishing

16-Sprinkle Julian cut ginger and green coriander to garnish and serve to guests
