easily available on big restaurants in Pakistan, Afghanistan and India with a
lasting and rich taste for the food lovers.
Specialty
of This Recipe:
Cooking chicken kababs on coals (BBQ) and frying chicken seekh kababs in cooking oil are two major features.
You have to use both ways to make
chicken seekh kababs and then prepare karahi/handi to taste both items in
different ways.

Note:
You can make Chicken Seekh Kabab either in a frying pan by frying the kabab or putting on metallic skewers to cook on burning coals (BBQ). Both types of chicken kebab will be used in this karahi and give a great taste to food lovers and consumers.
Ingredients to Make Chicken Kebab:Initially; you have to
arrange for following ingredients in given quantity to prepare the kabab
material either for frying or cooking on burning coals (BBQ).
i) Chicken Mince 1 Kg
ii) Green Chili 9-10
iii) Medium sized
onions 4
iv) Fresh coriander
leaves 1/2 cup
v) Mint leaves 2 TBS
vi) Fat 250-300 grams (Neat
and thick)
vii) Roasted and
crushed cumin seeds 1.5 TBS
viii) Red chili powder
1.5 TBS (up to taste)
ix) Mixed spices 1 TBS
x) Salt 1 TBS or as per
taste
xi) Ginger-Garlic paste
or chopped 2 TBS
xii) Coriander powder 1
TBS
xiii) Chinese Salt 2-3
Pinches
xiv) Black pepper 1 Tsp
xv) Cooking oil or ghee 1 TBS
Ingredients for Making Karahi Gravy:Now, you will need
given ingredients in provided quantity for making tasty and yummy gravy for Chicken Seekh Kabab Karahi/Handi at
home.
i) Cooking oil 1/2 cup
ii) Cumin seeds 2 TBS
iii) Large sized
chopped onion 1
iv) Ginger-Garlic paste
1-1.5 TBS
v) Mashed tomatoes 4-5
vi) Red chili powder
1.5 Tsp
vii) Salt 1/2 Tsp or up
to taste
viii) Turmeric powder
1/2 Tsp
ix) Mixed spices 1/2
Tsp
x) Fresh water 1/2 cup
xi) Black pepper powder 1/2 Tspxii) Red chili flakes
1/4 Tsp
xiii) Green chili 2-3
xiv) Julian cutting
ginger 2 TBS
xv) fresh coriander
leaves 2 TBS
Directions
to Cook Chicken Seekh Kabab:
In first step; you have
to prepare chicken kebab (on coals or by frying in pan) and then move ahead for gravy
preparation. Key steps to make chicken seekh kababs are;
1-Add chicken mince,
onion, green chili, ginger-garlic, red chili, roasted and crushed cumin seeds,
coriander powder, cooking oil, fats (250-300 grams), mixed spices, black
pepper, Chinese salt, coriander leaves and mint leaves to process
2-Keep processing (grinding)
this mixture until you gain uniform look of the chicken mince with all spices
and ingredients
3-Add 2 TBS cooking oil
and mix it well
4-Keep this ready kabab
mixture in fridge for 1-2 hours
5-Greeze your hands or
dip your hands in water (palm) and make a ball of mince to prepare a seekh
kabab
6-Keep seekh kabab
short if you want to fry and put the kabab on a skewer if you want to cook it
on coals (BBQ)
7-In frying, it will
take 5-6 minutes for cooking completely and it may take 8-10 minutes on coal
for cooking well
8-Place all ready kababs on a butter paper in a dish
Steps to Prepare Chicken Kabab Gravy:This is 2nd step where
you have to prepare gravy for Chicken
Seekh Kabab Karahi/Handi. You will need to focus on following steps and
directions exactly for making gravy.
1-Place a big pan on
flame and add cooking oil
2-If you have cooked
chicken seekh kababs on coals (BBQ), then you must fry ready kababs deeply in oil
for 4-5 mints. This will keep the kababs oily and they will never absorb the
gravy/liquids during karahi preparation.
3-Add salt, chopped
onion and ginger-garlic paste and fry for 3-4 minutes
4-Add tomato paste and
cumin seeds for frying once again
5-Now add fresh water
and cook gravy for 4 minutes and add red chili powder, red chili flakes, turmeric
powder, coriander powder and mixed spices
6-Cook this mixture for a couple of minutes and add green chili and black pepper powder
7-Simmer this for 2 minutes and reduce flame and add ready kababs in the gravy8-Stir well and
carefully and finally simmer it again for 3 minutes and turn off the flame
9-Dish out Chicken Seekh Kabab Karahi/Handi in a
serving plate or bowl and garnish with ginger, green chili and coriander leaves
